Bikini Recipe
Yields 10 servings
For the Clementine Cordial (makes 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
To make the Cocktail (produces 850ml, enough for 10)
400ml good quality vodka
100ml dry gin
150ml peach schnapps
200ml clementine cordial (see above)
Fresh cranberries, to garnish
Mandarin essential oil, as a final touch
Method
To prepare the Citrus Syrup: Combine all the ingredients inside a saucepan, heat until it reaches a simmer, agitating to dissolve. After that, take off the heat and leave to cool entirely. Pour into a sealable bottle, seal and refrigerate it chilled, where it will keep for around a month.
For the Cocktail Base: Combine all the liquid ingredients into one big jug, let it rest for an hour, then strain , ideally through cheesecloth, making it perfectly clear.
When ready to serve: Add 85ml from the batch mix into your mixing glass packed with ice, and stir carefully for one minute to chill. Pour into a chilled martini glass or similar, decorate with a few cranberries and finish by giving it a quick spritz of the essential oil above the glass.
